Chicken in nut sauce i.e. Kharcho in Georgia varies according to the regions of Georgia. This time my sister was in the kitchen and I was just a photographer. So she prepared Megrelian (west Georgia) style Kharcho for the first time, with some new elements.
Usually Kharcho is eaten with Maize Porridge (G’omi) like African Ugali, Fufu and also with maize bread .

Nutrition and healthy lifestyle are very important for our health. Thus, I try to prepare as healthy food as I can and eat on a regular basis in the course of the day.

Today’s chicken salad belongs to such healthy food, in my humble opinion.

First of all, please boil chicken fillet (a fresh one, not frozen), slice it and put it away for a while.

Then prepare canned corn, fresh cucumber, bell peppers, tomatoes, lettuce leaves, fresh basil (purple),  green onions and dice them as well.

On sixth of November, Georgian Culinary Academy was opened at Agriculture University of Georgia, Tbilisi. Georgian Culinary Academy offers many courses either for professional or amateur cooks; you can enjoy either long term or short term courses and even weekend courses. I think I shall take some weekend courses, which are very specific and to the point (poultry weekend, beef weekend, sea food weekend, etc).

As for teachers, Georgian Culinary Academy invited  a bunch of famous and professional cooks of Georgia, thus, the Academy includes everything to acquire proper knowledge in culinary.

It’s Mushroom Time!

Delicious dish for smart cooking, with only two main ingredients: mushroom and cheese.  First take some white mushrooms, after washing remove the stems and roast on the pan with butter or oil if you wish so.

After couple of minutes, spread grated cheese (in my case Georgian cheese – SULGUNI ) over the roasting mushrooms, leave on low heat and cap the pan.  In two minutes, after melting of cheese over the mushrooms, turn off the heat. You can add some spices of your taste as well.

Ingredients: 

Mushroom – 500 gr

Cheese (salty) – 50-100 gr

Butter – 1 table spoon

That’s it!

Tbilisoba as a celebration was first celebrated on October 28, 1979 and since than it has became the tradition.

The first established Tbilisoba was held in the renovated districts of the city in the form of the fancy dress carnival: Tbilisi noblemen and Kneinas dressed in the Georgian traditional dresses were looking out  from the balconies on the rafts  drifting on the Mtkvari.

In Tbilisoba not only Tbilisi residents but also the population of the whole Georgia visit the capital.

People  from the different  regions  of Georgia present their autumn harvest. That’s why the second name for Tbilisoba is “Autumn celebration.”

As usual Tbilisoba events are held during the whole day, in historical parts of Georgia, for example, Metekhi Bridge, Meidani, Rike Park, etc.

Yesterday, Tbilisoba started with the program - ”Multicultural Georgia” – presentation of cultural traditions of ethnic minorities in Georgia (wedding ceremonials of various nations in their national costumes, folk dances and songs) hosted by the National Library of Georgia.

Besides many diverse and beautiful events, on Sunday, Mini Wine Festival  will be held at Meidani, where you can enjoy Georgian wine and Mtsvadi .

How about some healthy food guys?  :)

In the world of fast food, busy life style, stressed working schedule, our body and health requires more and more attention, including physical exercises and healthy food.  I am not an exception, so I try my best to avoid fast food in my everyday life and eat some healthy, well prepared stuff regularly.

First of all, I prepared Vinaigrette - you may need 3 tbsp olive oil, 1 tbsp vinegar and 1 tsp basil, whisk it well into emulsion and your vinaigrette is ready.
